Cajun and Creole Cooking Class

Cinnamon Cafe hosted a Cajun and Creole cooking class with two full classes and close to 30 people in attendance,  and we had a great time cooking and eating together.

What better way to start a Cajun class then making our own seasoning with fresh herbs and spices.  Cooking while hungry is no fun so we start all of our classes off with an appetizer, this week was okra and andouille sausage breaded with buttermilk and a cornmeal and flour mixture and our Cajun seasoning.  Included in our classes is a selection of Marble beers or Meiomi wines.

Our main courses included Crawfish Etouffee and Jambalaya.  Almost all Cajun and Creole cuisine must include the Holy Trinity- celery, bell peppers and onion and of course plenty of our Cajun seasoning.

We learned about the Cajun style of cooking- a simple one pot method and the fancier Creole style with our Etouffee where each item is added to the pan in turn to keep our veggies crisp and our meats tender.

A good meal is incomplete without a fantastic dessert, this class we made some fantastic beignets.  Beignets are made from a simple yeast dough that is allowed to proof then it gets rolled out and deep fried.  Toss with loads of powdered sugar and how can you go wrong.
